Description

Turkey Stroganoff is a fun twist on traditional stroganoff with leftover turkey, mushrooms, and onions in a cream sauce.

Ingredients:

    1 package egg noodles
    8 oz. baby button mushrooms, diced
    1 white onion, diced
    3 tbsp. buttery spread
    2-3 cups leftover turkey
    1/2 cup leftover turkey gravy
    1/8 tsp. nutmeg
    1 tsp. thyme
    Salt & pepper to taste
    8 oz. vegan sour cream

Directions

1. Cook the noodles according to package instructions.
2. In a large skillet, dry sauté the mushrooms for 5 minutes.
3. Add diced onion and buttery spread to mushrooms. Cook for another 5 minutes until onions are translucent.
4. Add the turkey, gravy, and seasoning. Mix well.
5. Add the vegan sour cream and stir until combined.
7. Taste and adjust seasonings as needed. Serve over pasta.
