Tomato Sausage Kale Soup

The Tomato Sausage Kale Soup is a tomato-based soup with hot Italian sausage, carrots, celery, white onions, garlic cloves, and beans. A tasty soup for the cold season! This soup is sure to fill you up!


    2 lbs. hot sausage
    1 tbsp. vegan buttery spread
    3-4 large carrots, diced
    2-3 celery stalks, diced
    1 white onion, diced
    4 garlic cloves
    1 can cannelloni beans
    1 tsp. oregano
    1 tsp. basil
    1/2 tsp. salt
    1/4 tsp. pepper
    6 cups chicken broth
    14.5 oz. tomato sauce
    14.5 oz. diced tomatoes
    2 yellow potatoes, peeled and diced.
    1 bunch kale, chopped


1. Cook sausage in a large skillet. Once the sausage is mostly done, transfer to a 6 quart soup pot.
2. In the same pan, add 1 tbsp. vegan buttery spread, carrots, celery, and onions. Sauté for 7 minutes. Add minced garlic and sauté for another 2 minutes. Transfer to soup pot.
3. Add cannelloni beans, oregano, basil, salt, pepper, chicken broth, tomato sauce, and diced tomatoes.
4. Bring to boil. Add diced potatoes, reduce heat, cover, and cook for 10 minutes.
5. Add chopped kale and cook for another 5 minutes.
    • Pair with a grilled cheese sandwich for dipping.
