Thanksgiving Wild Rice is a flavorful combination of wild rice, cranberries, apple, leeks, shallots, mushrooms, carrots, and celery.

Ingredients:

    1 1/2 cups wild rice
    1 3/4 cups chicken broth
    1 cup apple juice
    2 tbsp. olive oil
    1 small leek, chopped
    1 shallot, diced
    4 oz. mushrooms, sliced
    2 carrots, grated
    2 celery stocks, chopped
    1 1/2 cups apple
    5 garlic cloves
    1/2 cup dried cranberries
    1 spring rosemary
    1 spring sage
    8 springs fresh thyme
    1/8 tsp. red pepper flakes
    1/2 tsp. salt
    1/4 tsp. pepper
    3/4 cup pecans

Directions

1. Cook wild rice accordingly to package instructions. Substitute the water for a combination of chicken broth and apple juice.
2. In a large skillet, heat olive oil. Add the diced leek, shallots, mushrooms, carrots, and celery. Cook for 8 minutes until tender. Add apple and garlic cloves. Cook for another 3 minutes or so.
3. Transfer veggie mix to a large baking dish. Add cranberries, seasoning, cooked rice, and pecans. Toss to combine.
4. Warm in oven and/or microwave before serving.
