Description

Tacos are a quick and easy Mexican dinner for the entire family! Just put out all the toppings and let everyone fix their own taco.

Ingredients:

    2 lbs. ground beef
    1 vegan Cheddar block
    Taco seasoning packet
    1-pint tomatoes, diced
    1 white onion, diced
    1 head iceberg lettuce, shredded
    1 jalapeno diced (optional)
    Refried beans (optional)
    Black beans (optional)
    Avocado or Guacamole (optional)
    Taco sauce or salsa
    Taco shells or tortillas

Directions

1. Cook beef in large skillet. Feel free to throw in some diced onions or jalapenos for extra flavor! Once cooked, stir in taco seasoning ingredients according to package instructions.
2. Meanwhile, while beef is cooking, dice tomatoes, onion, lettuce, jalapenos, etc.
3. Shred the cheddar cheese.
4. Make your taco - layer beef, cheese, and taco fixings. Top with taco sauce!

    • I would recommend subbing out the taco shell as the base. There are plenty of options such as using peppers (similar to a stuffed pepper recipe) or brown/white rice as a base and doing a taco bowl (one of my favorites).
    • Gluten free option: Substitute tortilla or corn shell with gluten free tortilla or shell.
    • Meat free option: Substitute taco meat with plant or bean based meat.
