Sweet potato stuffing is a fun twist on traditional stuffing made of sweet potatoes, celery, onion, bread crumbs, and seasonings.


    1 sweet potato
    3 tbsp. olive oil, divided
    2 celery stalks, diced
    1 sweet onion, diced
    6 cups bread crumbs
    1/2 tsp. salt
    1 tsp. poultry seasoning
    1/2 tsp. pepper
    3/4 tsp. sage
    1/4 cup buttery spread
    1 cup chicken broth


1. Preheat oven to 375 degrees.
2. For the sweet potato, wash, peel, and dice. Drizzle with 1 tbsp. olive oil and season with salt and pepper. Place on cookie sheet lined with parchment paper. Cook for 15 minutes, flip, and cook for another 15 minutes.
3. Meanwhile, heat a large skillet with 2 tbsp. olive oil. Add diced celery and onion. Cook for 5-8 minutes. Transfer to casserole dish.
4. Add breadcrumbs to casserole dish. Sprinkle with salt, poultry seasoning, pepper, and sage. Once sweet potato cubes are tender, add to casserole dish.
5. Pour chicken broth over casserole and add spoonful of buttery spread to the top.
6. Cook for 15-20 minutes until heated through.
