Description
A simple, delicious side dish for any breakfast! These Sweet Potato Hash Browns are made of grated sweet potatoes seasoned and fried in butter and olive oil.
Ingredients:
- 1 large sweet potato, peeled & grated
2-4 tbsp. buttery spread
2-4 tbsp. olive oil
Salt & pepper
Garlic & onion powder
Directions
1. Peel and grate the sweet potatoes.
2. Heat a large skillet over medium heat with 2 tbsp. buttery spread and 2 tbsp. olive oil.
3. Add the grated sweet potatoes so that you have one layer that cooks evenly. You may have to work in batches.
4. Season with salt, pepper, garlic powder, and onion powder.
5. Cook sweet potatoes for 2-3 minutes, flip, cook for another 2-3 minutes, flip, and cook for another 2-3 minutes. Once sweet potatoes are crispy, remove from heat and transfer to a bowl. Keep a close eye on the hash browns so that they do not burn.
