Description

Stuffing corn fritters are made of cornbread stuffing, corn, zucchini, and onion.

Ingredients:

    6 oz. cornbread stuffing
    1/2 cup flour
    1 zucchini, grated
    8 oz. creamed corn
    1/4 white or yellow onion, diced
    Olive oil

Directions

1. Combine stuffing, flour, zucchini, corn, and onion in bowl. Mix until combined. Shape into 1/2 inch patties.
2. Heat olive oil in large skillet. Add patties to skillet, cook for 3 minutes, flip, and cook for 3 minutes. Remove from heat and repeat with remaining fritters.
