Description

A wonderful way to spice up your pancakes. Spiced Apple Pancakes are made of homemade pancake mix with diced apples and aromatic spices topped with maple syrup and a candied apple topping. Make extra topping. You will be glad you did!

Ingredients:

    Pancake Ingredients
    1 1/3 cup flour
    1 ½ tsp. baking powder
    1 tsp. cinnamon
    1 tbsp. sugar
    ½ tsp. salt
    2 tbsp. buttery spread
    1 egg or its equivalent
    1 tsp. vanilla extract
    1 ½ cup Almond milk
    1 1/2 cup apple, diced
    Maple syrup

    Apple Topping
    1 1/2 cup apple, diced
    2 tbsp. buttery spread
    ½ cup brown sugar
    ½ tsp. cinnamon

Directions

1. In a medium bowl, combine flour, baking powder, cinnamon, sugar, and salt.
2. Melt 2 tablespoons vegan buttery spread. In another bowl, combine egg or egg equivalent, vanilla, almond milk, and melted butter.
3. Slowly combine dry and wet ingredients. Fold in 1 1/2 cups diced apple.
4. Heat a large skillet with 1 tbsp. buttery spread. Pour about 1/4 cup pancake batter into pan. Once bubbles appear, flip and continue cooking until both sides are golden. Repeat until all batter is used and add more buttery spread as needed.
5. Meanwhile, to make the apple topping, heat a small sauce pan over medium heat with 2 tbsp. buttery spread. Add diced apple, brown sugar, and cinnamon. Cook for 10-15 minutes, stirring occasionally. Make sure the apples have softened and the mixture is jam-like.
6. Serve pancakes with maple syrup and apple topping.
