Dairy-Free, Egg-Free, Peanut-Free, Nut-Free, Fish-Free, Shellfish-Free
Another quick and easy weekday meal. Spanish Rotini is an easy-to-make one-pot meal made of ground beef, red peppers, onion, tomatoes, seasoning, and pasta.
- 1 1/2 lbs. ground beef
1/2 red pepper, diced
1 small white onion, diced
1 tsp. olive oil
2 tsp. sugar
3 tsp. chili powder
1 tsp. salt
1/2 tsp. red pepper flakes
1/2 tsp. garlic powder
14.5 oz. diced tomatoes
16 oz. rotini
3 1/2 cups beef broth
1. In a large skillet, cook ground beef over medium heat until no longer pink. Drain grease, remove from heat and set aside.
2. In the same skillet, add red pepper, onion, and 1 tsp. olive oil. Sauté until onions are translucent.
3. Add the diced tomatoes, sugar, chili powder, salt, red pepper flakes, garlic powder, rotini, and 3 1/2 cups beef broth
4. Bring to boil. Reduce heat, cover, and simmer for 25-30 minutes until pasta is tender.
