Description

The Spaghetti Skillet with Meatballs offers a fun twist on traditional spaghetti where the spaghetti noodles are cooked in the sauce.

Ingredients:

    Meatball Ingredients
    2-3 garlic cloves, minced
    1 white onion, diced
    1 tbsp. vegan buttery spread
    2/3 cup almond milk
    1/2 cup breadcrumbs
    1/4 cup vegan Parmesan
    2 eggs or equivalent
    1 tsp. salt
    1 tsp. pepper
    1 tbsp. parsley
    1 lb. ground beef
    1 lb. ground pork

    Spaghetti Ingredients
    1 tbsp. vegan buttery spread
    1 white onion, diced
    3 garlic cloves, minced
    3 cups water
    15 oz. tomato sauce
    15 oz. diced tomatoes
    2 tsp. chili powder
    1 tsp. oregano
    1 tsp. sugar
    1 tsp salt
    1 package spaghetti noodles
    Vegan Parmesan
    Fresh parsley, chopped

Directions

1. Add almond milk, breadcrumbs, vegan Parmesan, eggs, salt, pepper, and parsley. Mix to combine.
2. Add beef and pork. Using your hands, work the mixture until well combined. Roll into 1 inch meatballs.
3. Heat a large skillet over medium heat, cook meatballs until cooked through. Transfer and set aside.
4. In a large soup pot, heat 1 tbsp. buttery spread. Add diced onion and sauté for 5 minutes. Add minced garlic cloves and sauté for another 2 minutes. Add diced tomatoes, tomato sauce, water, chili powder, oregano, sugar, and salt. Bring to boil.
5. Add one package of spaghetti noodles. Cover and simmer for 20 minutes until spaghetti is tender. Stirring occasionally.
6. Add meatballs and cook for another 5 minutes.
7. Serve with vegan Parmesan and chopped parsley.
    • Serve with garlic bread and/or breadsticks.
