Sonoma Chicken Salad

Sonoma Chicken Salad is a tasty chicken salad with grapes, celery, red onion, and pecans covered in a creamy homemade poppy seed dressing.
- 2 lbs. chicken breasts, cooked and diced
3/4 cups pecan pieces
1 small red onion, diced
2 cups red seedless grapes, quartered
3 stalks celery, diced
4 oz. vegan cream cheese
1 tbsp. apple cider vinegar
2 tbsp. honey
2 tsp. poppy seeds
1/4 tsp. pepper
1/4 tsp. salt
1. Combine diced cooked chicken, pecan pieces, diced red onion, quartered red grapes, and diced celery in a large bowl.
2. In a small mixing bowl, combine vegan cream cheese, vinegar, honey, poppy seeds, salt, and pepper. Mix until combined.
3. Pour the dressing over the chicken mixture. Toss until coated evenly.
