Honey Garlic Chicken is an easy, delicious, and healthy slow cooker meal! We served it over rice with broccoli and corn on the side.

2-3 lb. boneless chicken thighs or chicken breasts
    1/3 cup low-sodium soy sauce
    1/3 cup honey
    2 tbsp. tomato paste
    1 tbsp. chili paste
    4 garlic cloves, minced
    1 tbsp. rice wine vinegar
    2 tbsp. cornstarch

1. Place the chicken in a large cooker.
2. In a bowl, whish soy sauce, honey, tomato paste, chili paste, garlic cloves, and rice vinegar. Pour over chicken.
3. Cook on low for 5 hours or high for 2-3 hours.
4. Remove the chicken and let cool. Whisk the cornstarch with 2 tbsp. water. Then, add the crockpot liquid and whisk until combined. To thicken the sauce, cook for 20 minutes on high.
5. Meanwhile, shred the chicken. Once the sauce is thickened, add the chicken to the sauce. Toss to coat.
6. Serve over rice with green onions on top.
