Description

Sesame Chicken Rice Noodles are a delicious and easy meal made of rice noodles, ground chicken, red peppers, sugar snap peas, and green onions.

Ingredients:

    1 package Rice Noodles
    1 lb. ground chicken
    1 red pepper, diced
    2-3 cups sugar snap peas, diced
    6 green onions, diced
    3 garlic cloves, minced
    ~ 5 tbsp. sesame oil
    1/3 cup rice wine vinegar
    1/4 cup soy sauce
    1/4 tsp. Chinese Five Spice
    1/4 tsp. ginger
    1 tbsp. sesame seeds
    1/2 tsp. ground pepper

Directions

1. Boil a pot of water. Remove from heat. Add rice noodles and let them soak for about 5 minutes. Stir a couple of times to break up the noodles. When they are soft, drain and rinse with cold water.
2. Add a tbsp. of sesame oil to the skillet. Add ground chicken. Cook and crumble the meat. Remove from pan and set aside.
3. Add diced red peppers and sugar snap peppers. Sauté for about 7 minutes until vegetables soften. Add green onion and minced garlic. Cook for another 1-2 minutes.
4. Meanwhile, make the sauce. Combine soy sauce, rice wine vinegar, 2 tbsp. sesame oil, ginger, Chinese five spice, and sesame seeds in bowl. Whisk until combined.
5. In a large pan, add tbsp. sesame oil and rice noodles. Sauté for a few minutes. Add chicken, vegetables, and sauce. Sauté for another 5 minutes, tossing to evenly coat with sauce.
