Roasted Red Potatoes
Dairy-Free, Egg-Free, Peanut-Free, Nut-Free, Fish-Free, Gluten-Free, Shellfish-Free, Soy-Free
These roasted red potatoes coated in garlic, herbs, and parmesan cheese makes a great side dish.
- 1 lb. baby red potatoes (quartered or halved depending on size)
1/4 cup olive oil
3-4 garlic cloves, minced
1 tsp, freshly ground salt
1 tsp. freshly ground pepper
1 tsp. Italian seasoning
1/4 cup vegan Parmesan Cheese
2 tbsp. parsley
1. Preheat oven to 400 degrees. Prepare a cookie sheet by lining it with foil and spraying with cooking spray.
2. Prepare and cut the potatoes. Place in large bowl. Add olive oil, garlic, seasonings, and Parmesan cheese. Toss to coat.
3. Spread the potatoes on baking sheet. Bake for 35-40 minutes until golden brown and fork tender.
