Description
Potato Kale Sausage Soup is a creamy, hearty combination of potatoes, sausage, onion, parsnips, carrots, celery, and kale.
Ingredients:
- 2 lb. hot bulk pork sausage
2 tbsp. olive oil
1 medium onion, diced
2 parsnips, diced
3 carrots, diced
3 celery stalks, diced
4 tbsp. flour
4 cups almond milk
6 cups chicken broth
1 tsp. oregano
1 tsp. garlic powder
1 tsp. fennel
1/4 tsp. red pepper flakes
1 tsp. salt
1/2 tsp. black pepper
1 bay leaf
1 lb. red potatoes, diced
4 cups kale, roughly chopped
Directions
1. In a large skillet or cast iron, cook the sausage until cooked through. Remove from pan and set aside.
2. Using the same skillet, add 2 tbsp. olive oil along with onion, parsnips, carrots, and celery. Cook for 5-8 minutes until tender.
3. Add the flour and cook for 1-2 minutes until flour starts to brown. Slowly add in the almond milk, stirring constantly to combine.
4. Transfer mixture to large soup pot. Add chicken broth, sausage, and seasoning. Bring to boil.
4. Once boiling, reduce to simmer, add the potatoes, and cook for another 10-15 minutes until potatoes are tender.
5. Add the kale and cook for another 2-3 minutes.
