Pesto Chicken Crescent Roll-Ups

Pesto Chicken Crescent Roll-ups have golden brown flaky crescents on the outside with pesto, shredded chicken, and vegan mozzarella cheese shreds inside.


    1 lb. chicken, cooked and shredded
    3 tbsp. olive oil
    1/2 tsp. salt
    1/4 tsp. pepper
    1 can crescent rolls
    3 tbsp. pesto.
    1/2 cup vegan mozzarella cheese
    2 tbsp. vegan Parmesan cheese


1. Preheat oven to 375 degrees.
2. In a skillet, add olive oil. Season chicken with salt and pepper. Saute chicken 4-6 minutes, flip, and cook for another 4-6 minutes until golden and cooked through. Remove from heat. Let cool then shred.
3. Line a cookie sheet with foil and spray with cooking spray.
4. Unroll the crescent dough. Spread 1 tsp. of pesto on each triangle. Layer shredded chicken and mozzarella cheese. Roll the dough around the chicken and place on cookie sheet.
5. Brush outside with olive oil and sprinkle with vegan Parmesan cheese.
6. Bake for 15 minutes until crescent rolls are golden brown.
