Description

Pancake Sausage cups are a fun twist on pancakes and are great for on-the-go breakfasts.

Ingredients:

    1 cup pancake mix
    1 cup almond milk
    2 tbsp. maple syrup
    1/2 cup vegan cheddar shreds
    12 oz. maple sausage links

Directions

1. Preheat oven to 400 degrees.
2. Cook sausage until cooked through. Let cool and slice into pieces.
3. In a large bowl, combine pancake mix, almond milk, maple syrup, vegan cheddar shreds, and sausage slices. Mix until combined.
4. Spray muffin tins with non-stick spray. Fill muffin cups about 2/3's of the way full.
5. Bake for 15 or so minutes until cooked through. Insert a wooden toothpick into the middle of a cup. When it comes out clean, the muffin cups are cooked through.
