Description

Oven-Baked Sweet Potato Hash Browns are our healthiest hash brown recipe with minimal oil yet crispy and delicious.

Ingredients:

    2 tbsp. olive oil
    1/2 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. garlic powder
    1/2 tsp. onion powder
    2 large sweet potatoes, peeled and grated

Directions

1. Preheat oven to 400 degrees.
2. Peel then grate sweet potatoes. Place in bowl.
3. Drizzle olive oil over grated sweet potatoes and season. Toss until seasoning is evenly distributed.
4. Line two cooking sheets with parchment paper. Layer the grated sweet potatoes.
5. Roast for 12-15 minutes, flip, and roast for another 10 minutes until sweet potatoes start to brown and are crispy.
