Dairy-Free, Egg-Free, Peanut-Free, Nut-Free, Gluten-Free
This mushroom rice recipe will surely become your favorite. Consisting of long grain rice, finely diced mushrooms, and topped with green onion, this makes for the perfect side of grain!
- 2 tbsp. olive oil
2 tbsp. vegan buttery spread
1.5 lb. mushrooms, diced or sliced
1 onion, diced
2 garlic cloves, minced
1 tbsp. Worcestershire sauce
2 ½ cups long grain rice
2 ¼ cups chicken broth
1 cup sliced green onions
1. In a large skillet, heat olive oil and vegan buttery spread. Sauté the mushrooms and onions for 10 minutes over medium-high heat. Add the minced garlic and cook for another 1-2 minutes.
2. Add Worcestershire sauce, rice, and chicken broth.
3. Bring to boil, then reduce heat, cover, and simmer for 15 minutes or until the rice is cooked.
4. To serve, top with green onions.
