Description

Mississippi Mud Cake is a delicious combination of chocolate cake, melted marshmallows, pecans, and frosting.

Ingredients:

    Cake Ingredients
    1/2 cup unsalted butter, room temperature
    1 1/2 cups white sugar
    2 eggs
    1 1/2 cups flour
    1/2 cup unsweetened cocoa powder
    1/2 tsp. salt
    1/2 tsp. baking powder
    1 tsp. baking soda
    1/2 cup coffee
    1/2 cup almond milk

    Topping Ingredients
    10 oz. mini marshmallows
    1/2 cup unsalted butter
    1/2 cup almond milk
    1/4 cup cocoa powder
    4 cups powdered sugar

Directions

1. Preheat oven to 350 degrees.
2. In a bowl, combine flour, cocoa, salt, baking powder, and baking soda. Set aside.
3. In a measuring cup, combine coffee and almond milk. Set aside.
4. In a mixer, beat butter and sugar for 5 minutes. Add eggs one at a time.
5. Slowly, add in 1/3 cup flour mixture then 1/3 cup almond milk. Rotating back and forth.
6. Transfer batter to a prepared 13x9 baking pan.
7. Bake for 30 minutes until toothpick comes out clean.
8. Remove from oven, top with marshmallows, and return to oven for 3-4 minutes.
9. Remove from oven and let cool completely.
10. For the frosting, in a small saucepan, melt butter. Add almond milk and cocoa powder. Cook for about 3 minutes until mixture starts to bubble.
11. In a mixing bowl, add powdered sugar and butter mixture. Beat until smooth. Drizzle frosting over cake.
12. Chill cake for 1 hour than serve.
