Mexican Wedding Cakes

Mexican Wedding Cakes are little bite-size cookies that will melt in your mouth. So easy to make and then covered with powdered sugar. Kids love it when you call them "Snowballs."
- 1 cup vegan butter
½ cup powdered sugar
2 cups flour
½ tsp. salt
1 tsp. vanilla
1 cup powdered sugar (for coating)
1. Preheat oven to 400 degrees.
2. Cream butter and powder sugar. Add in vanilla. Mix to combine. Add flour and salt. Mix to combine.
3. Roll into small balls.
4. Bake for 12 minutes.
5. Remove from oven, and then drop in powdered sugar to coat.
