Description

Meat Stuffed Pasta Shells are large shell noodles stuffed with meat and topped with marinara sauce, and vegan parmesan cheese. The pasta shells won't be the only thing stuffed with this recipe!

Ingredients:

    1 box jumbo shells
    1 white/yellow onion, diced
    3 garlic cloves, minced
    3 tbsp. vegan buttery spread
    2 lbs. ground beef
    1 cup allowed breadcrumbs
    1/2 cup almond milk
    1 egg or its equivalent
    1 tsp. salt
    ½ tsp. pepper
    1 tsp. Italian seasoning
    2 oz. vegan Parmesan cheese
    1 jar marinara sauce

Directions

1. Preheat oven to 400 degrees.
2. Cook pasta shells according to package instructions. Drain, rinse under water, and set aside.
3. Meanwhile, sauté the onions in vegan buttery spread for 5-7 minutes until translucent.
4. For the beef mixture, combine sautéed onions, ground beef, breadcrumbs, almond milk, egg substitute, salt, pepper, and Italian seasoning in a bowl. Mix to combine.
5. Heat a large skillet over medium heat. Add beef mixture and cook until mostly done. Drain the grease.
6. To prep the shells, fill each shell with the beef mixture and place into a 9x13 or larger baking dish.
7. Drizzle marinara sauce over prepared shells. Top with vegan Parmesan cheese.
8. Bake for 20 minutes until cheese is melted and shells are warmed through.
