Description
Maple Glazed Potato Carrot Corn Medley is a sweet side dish ideal for the holidays! It is a tasty combination of bacon, potatoes, carrots, and corn glazed with maple syrup and seasonings.
Ingredients:
- 1/2 lb. bacon
1 tbsp. olive oil
2-3 yellow potatoes, peeled and diced
3-4 carrots, diced
1 onion, diced
2 cups frozen sweet corn
2 tbsp. maple syrup
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. onion powder
Directions
1. In a large pan or cast iron, cook the bacon until crispy. Remove from pan and leave the bacon grease.
2. Add olive oil, diced potatoes and carrots. Cook for 5 minutes. Stirring occasionally.
3. Add the diced onion. Cook for another 8-10 minutes until onion starts to carmalize and potato/carrots are tender.
4. Add sweet corn. Cook 2-3 minutes until heated through.
5. Add maple syrup, salt, pepper, and onion powder. Stir until combined. Add bacon. Stir to mix.
