Description

Loaded Tator Tot Cups are an easy to make appetizer with a potato boat and vegan cheddar cheese, bacon, and ranch dressing on top.

Ingredients:

    48 Tator Tots
    1 cup vegan Cheddar Shreds
    1/2 lb. bacon, cooked and crumbled
    Ranch dressing

Directions

1. Preheat oven to 400 degrees.
2. Spray a mini muffin pan with nonstick spray
3. Place two tator tots in each cup and bake for 10 minutes.
4. Remove muffin tin from oven and carefully use a spoon to push the tator tots down into each cup.
5. Fill each cup with cheddar shreds and bacon.
6. Return to oven and cook for 15-20 minutes until tator tots are golden brown.
7. Remove from oven and cool for 5 minutes. Drizzle ranch dressing over the tator tots before serving.
