Description

Inspired by Panda Express, Honey Sesame Chicken Breast consists of breaded chicken, greens, and yellow pepper served over rice.

Ingredients:

    Chicken Ingredients
    2 lbs. chicken breasts
    1 tsp. salt
    1/2 tsp. pepper
    1 cup flour
    1 cup cornstarch plus another 2 tsp.
    1 cup almond milk

    Sauce Ingredients
    1/2 cup sweet chili sauce
    1/2 cup honey
    2/3 cup water
    4 tbsp. white vinegar
    4 tbsp. lemon juice
    1/4 tsp. salt
    1 1/2 tbsp. soy sauce
    1 1/2 tbsp. cornstarch

    Additional Ingredients
    1 lb. green beans, trimmed and cut into 1-inch pieces
    1 yellow bell pepper, sliced
    1 tbsp. sesame oil
    Sesame seeds
    Serve over sticky rice

Directions

1. Combine 1 tsp. salt, 1/2 tsp. pepper, 1 cup flour, and 1 cup cornstarch in a bowl. Stir to combine.
2. In another bowl, add 1 cup almond milk.
3. Dice the chicken into 1 inch pieces. Once diced, dip the chicken into the flour mixture, then milk, and then back into the flour mixture. Repeat with remaining chicken.
4. Heat vegetable oil in skillet. Use enough vegetable oil so that there is about 1 inch depth.
5. In batches, add the chicken to the pan. Make sure you don't overcrowd the pan. Cook for 4 minutes, then flip, and cook for another 4 minutes. Remove from heat once browned and place on a paper towel. Repeat with remaining chicken.
5. In a small sauce pan, combine sweet chili sauce, honey, water, white vinegar, lemon juice, salt, soy sauce, and cornstarch. Bring to boil and cook until it thickens.
6. Once all the chicken is cooked, drain most of the oil and leave about 2 tbsp. oil.
7. Stir fry the string beans and peppers for 2 -3 minutes. Add the cooked chicken, sesame oil, and honey sesame sauce. Toss to combine.
8. Remove from heat. Top with sesame seeds.
