Description
Hearty Lentil Sausage Soup is a tomato-based soup with lentils, sausage, carrots, onion, celery, and seasoning.
Ingredients:
- 2 lb. ground sausage
Olive oil
1 white/yellow onion, chopped
1 cup carrots, diced
1 cup celery, diced
4 garlic cloves, minced
16 oz. diced fire roasted tomatoes
2 tbsp. tomato paste
1 tsp. dried thyme
1 tsp. salt
1/2 tsp. black pepper
1/8 red pepper flakes
6 cups chicken broth
6 cups water
1 tsp, Worcestershire
2 cup lentils
Directions
1. In a cast iron or skillet, cook and crumble the sausage until cooked through. Transfer to soup pot leaving the drippings in the cast iron or skillet.
2. Add the diced onion, carrots, and celery to pan. Cook for 8-10 minutes until onions become translucent. Add in minced garlic and cook for another minute. Add the tomato paste and flour. Cook for 2 minutes. Add the 2 cups water and use a spatula to clean the bottom of the pan. Transfer mixture to soup pot.
3. Add diced tomatoes, seasonings, chicken broth, and Worcestershire sauce to the pot.
4. Bring to boil, add lentils, and reduce to simmer. Cover and simmer for 45 minutes.
