Description

Hawaiian Hash is made of sweet potatoes, onion, pineapple, bacon, ham, scrambled eggs, and vegan cheddar shreds.

Ingredients:

    2-3 sweet potatoes, peeled & diced
    1 sweet onion, diced
    1/2 can pineapple, diced
    1 cup ham, diced
    2 eggs, scrambled
    3 bacon strips
    1/2 cup vegan cheddar shreds
    Salt & pepper

Directions

1. Preheat oven to 400 degrees. Toss diced potatoes with olive oil. Place on cookie sheet lined with parchment pepper. Cook for 15 minutes, flip, and cook for another 10 minutes.
2. Beat eggs with salt and pepper. Heat a skillet over medium heat. Add eggs and cook stirring constantly until scrambled. Removed from heat.
3. Add olive oil to skillet and saute diced onion until translucent. Add diced ham and pineapple. Cook for 5-10 minute until liquid reduces.
4. Add potatoes, bacon, and scrambled eggs. Season with salt & pepper to taste. Fry for 5 minutes and top with cheddar shreds. Cook until melted
