Description

Hawaiian Bacon Pineapple Fried Rice is a fun twist on fried rice with the addition of sweet pineapple and crispy bacon. Hawaiian Bacon Pineapple Fried Rice is made of rice, onion, carrots, peas, pineapple, and bacon.

Ingredients:

    2 tbsp. olive oil
    1 white onion, diced
    4 garlic cloves, minced
    2-3 carrots, diced
    1 cup frozen peas
    1 cup fresh or frozen corn
    2 cups jasmine rice. cooked
    1 lb. bacon, cooked and crumbled
    2 cups pineapple, diced
    4 garlic onions
    4 tbsp. soy sauce or liquid amino acids
    1/4 tsp. cracked black pepper

Directions

1. Heat a large skillet or wok with 1 tbsp. olive oil. Add carrots and onion. Sauté for 5 minutes. Add minced garlic and sauté for another 1 minute. Add peas and corn. Toss to mix vegetables.
2. Add cooked rice. Toss rice and vegetables together. Add bacon, pineapple, green onions, and soy sauce. Season with cracked black pepper.
3. Stir until mixed together and cook for another 2-3 minutes.
