Description
Grilled Garlic Herb Chicken is made of chicken thighs and/or legs marinated in a fresh and flavorful garlic herb marinade.
Ingredients:
- Chicken Ingredients
2-3 lbs. chicken thighs and/or legs
6 tbsp. olive oil
4 tbsp. lemon juice
1/2 cup fresh basil, chopped
1/2 cup fresh parsley, chopped
1 tbsp. fresh oregano, minced
1 tbsp. fresh rosemary, minced
1 tbsp. fresh thyme, minced
1 tbsp. garlic, minced
Freshly ground salt & pepper
Garlic Herb Sauce
2 tsp. garlic, minced
3 tbsp. buttery spread
1 lemon, zested & juiced
1 tbsp. fresh basil, chopped
1 tbsp. fresh parsley, chopped
1 tsp. fresh oregano, minced
1 tsp. fresh rosemary, minced
1 tsp. fresh thyme, minced
Directions
1. In a medium bowl, combine olive oil, minced garlic, and fresh herbs. Season with salt and pepper. Mix to combine.
2. In large resealable bag, place chicken thighs. Pour marinade over chicken. Toss to evenly coat chicken.
3. Place in refrigerator and let marinade 2-8 hours.
4. Meanwhile, prepare the serving sauce. In a small sauce pan, melt buttery spread. Add minced garlic. Cook for 2-3 minutes. Remove from heat.
5. Transfer melted butter to a small bowl and/or measuring cup. Add lemon zest and juice. Add fresh herbs. Mix to combine.
6. Preheat grill to about 400 degrees. Grill chicken until it is cooked through. Recommend 6 minutes per side and flipping 3 times.
