Creamy Cucumber Salad

A fresh, dilly summer treat! Our cucumber salad is a delicious combination of cucumbers, red onion, and fresh dill coated in a creamy sauce. A great dish to bring to a cookout or summer party.
- 2 cups English cucumbers, peeled and thinly sliced
1 red onion, peeled and thinly sliced
1/2 cup vegan sour cream
1 tbsp. white vinegar
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. pepper
1 tbsp. fresh dill
1. Once the cucumbers are peeled and thinly sliced, place in a colander and season with salt. Let the cucumbers sit for at least 1 hour. Drain liquid and pat the cucumbers dry.
2. Combine vegan sour cream, white vinegar, sugar, salt, garlic powder, and pepper in a small bowl. Mix until combined.
3. In a large bowl, combine vegan sour cream mixture with cucumbers and red onion. Toss to coat. Top with fresh dill!
