Dairy-Free, Egg-Free, Peanut-Free, Nut-Free, Fish-Free, Shellfish-Free
This creamed corn recipe is made up of bacon, corn, red and yellow peppers, and green chilies in a creamy sauce. The festive colors make this the perfect side dish for the holidays!
- 1/2 lb. bacon
5 cups sweet corn
1 red pepper, diced
1 yellow pepper, diced
8 oz. reduced-fat allowed cream cheese
½ cup allowed milk
1 can chopped green chilies (optional)
2 tsp. sugar
1 tsp. pepper
1/2 tsp. salt
1. 1. Cook bacon over medium heat. Reserve 1 tbsp. bacon grease
2. Sauté red and yellow peppers in bacon drippings. Cook for 5-6 minutes until tender.
3. Add corn, allowed cream cheese, allowed milk, chilies, sugar, pepper, and salt.
4. Bring to a boil. Reduce heat simmer, cover 8 -10 minutes.
