Description

Corned Beef Hash is a combination of potatoes, buttery spread, celery, carrots, onion, and corned beef. It could be served with eggs at breakfast or as leftovers for lunch.

Ingredients:

    1 lb. red potatoes
    3 tbsp. buttery spread
    2/4 cup celery, diced
    3/4 cup carrots, diced
    3/4 cup onion, diced
    1 lb. corned beef, diced
    1/4 tsp. pepper

Directions

1. In a cast iron skillet, heat buttery spread over medium heat. Add diced potatoes and carrots. Cook for 5-10 minutes. Don't stir too often to allow the potatoes to brown.
2. Add diced celery and onion. Cook for another 10-15 minutes until onion is translucent and potatoes are tender.
4. Add diced corned beef. Season with pepper. Cook until corned beef is heated through.
