Description

Homemade cornbread is the perfect side for chili, soup, or Thanksgiving dinner.

Ingredients:

    1 cup cornmeal
    1 cup plus 1 tbsp. flour
    2 tsp. baking powder
    1/4 tsp. baking soda
    1/2 tsp. sea salt
    1 cup almond milk
    1 egg or its equivalent
    1/4 cup maple syrup
    1/4 cup olive oil

Directions

1. Preheat oven to 350 degrees. Spray a 8x8 baking pan with non-stick cooking spray.
2. In a large bowl, combine the dry ingredients. In another bowl, combine the wet ingredients. Pour the wet ingredients into the dry ingredients and stir until combined.
3. Pour the batter into the prepared pan.
4. Cook for 25-30 minutes or until a toothpick comes out clean. Let cool for 15 minutes before slicing.
