Description

Corn O'Brien is a combination of corn, bacon, green pepper, and white onion.

Ingredients:

    3 slices bacon
    1/4 cup onion, minced
    2 tbsp. green bell pepper, diced
    2 cups corn
    Freshly ground salt & pepper
    Pimentos

Directions

1. Cook the bacon in a skillet until browned.
2. Drain the bacon on a paper towel and leave bacon grease in pan.
3. Add onion and bell pepper to skillet. Cook until onion is translucent.
4. Add corn, pimentos, and reserved bacon. Cook until heated through, 5 minutes.
