Description

Colcannon is an Irish dish of cabbage, potatoes, and bacon.

Ingredients:

    3 lbs. potatoes, scrubbed & peeled
    1/2 cup butter
    1 cup almond milk
    Freshly ground salt & pepper
    1 head cabbage, cored & finely shredded
    1 lb. bacon, cooked
    4 green onions, sliced
    Fresh parsley

Directions

1. In a large pot, boil water. Wash, peel, and dice potatoes. Boil potatoes until fork tender.
2. Mash the potatoes. Add butter and almond milk. Stir until combined. Season with freshly ground salt & pepper.
3. Cook the bacon and reserve the grease.
4. Finely slice the cabbage & cook in bacon drippings until tender.
5. Combine the potatoes, cabbage, bacon, green onions, and parsley.
