Cilantro Lime Chicken Tacos

Cilantro Lime Chicken Tacos are a simple, delicious, summer recipe made of cilantro-lime chicken, tangy coleslaw, and avocado cream.


    2 limes, juiced & zested
    1 tbsp. olive oil
    2 garlic cloves, minced
    1 tsp. honey
    2 tbsp. cilantro

    2 cups green cabbage, shredded
    1 cup red cabbage, shredded
    1 cup carrot, shredded
    1/2 cup cilantro
    1/2 cup green onion, diced
    2 limes
    1 tbsp. olive oil
    1 tsp honey
    1 pinch freshly ground salt

    Avocado Cream
    1 avocado
    1 garlic clove, minced
    1/4 cup cilantro
    2 oz. vegan cream cheese
    3 tbsp. lime juice
    2 tbsp. olive oil
    Salt & pepper to taste

    Additional Ingredients
    Flour tortillas
    2 lb. boneless chicken breasts


1. Combine marinade ingredients. Place chicken in bag or bowl. Pour marinade over chicken and let sit for 4 hours or overnight.
2. For the coleslaw, combine cabbage, carrots, green onions, and cilantro in large bowl, In a smaller bowl, combine lime juice, olive oil, honey, and salt. Pour over slaw mixture and toss until evenly coated.
3. For the avocado cream, combine avocado, garlic, cilantro, cream cheese, lime juice, olive oil, salt and pepper.
4. Preheat grill or cast iron over medium heat. Season the chicken with salt and pepper. Cook chicken for 3-5 minutes, flip, and cook for another 3-5 minutes until cooked through. Remove from heat and let rest for 5 minutes before slicing.
5. To assemble the tacos, place chicken in tortilla, top with slaw, and drizzle with avocado cream.
