Description

Inspired by Chipotle Mexican Grill. these copycat Chipotle Fajita Vegetables are a crunchy, flavorful combination of red peppers, green peppers, and onions.

Ingredients:

    2 tbsp. olive oil
    3 bell peppers (red, yellow, and green pictured above)
    1 red onion
    1 tsp. oregano
    1/2 tsp. salt

Directions

1. Slice the peppers and onions.
2. Heat olive oil a large skillet over medium-high heat. Add peppers, onion, oregano, and salt.
3. Cook for 7-8 minutes or until the peppers are slightly softened, stirring occasionally.
