Description

Inspired by Chipotle Mexican Grill, Chipotle Cilantro Lime Rice is the perfect base grain for Chipotle burrito nights. The cilantro lime adds a zest that pairs perfectly with the available meats and vegetables.

Ingredients:

    2 cups long-grain rice
    Salt
    1 tbsp. olive oil
    2 tbsp. finely chopped cilantro
    2 tbsp. fresh lime juice
    2 tbsp. fresh lemon juice

Directions

1. Bring 4 cups of water to boil. Add rice, olive oil, and salt. Return to boil. Reduce heat to low, cover, and simmer for 15 minutes.
2. Meanwhile, chop cilantro.
3. Combine cooked rice, chopped cilantro, lime juice, and lemon juice with salt. Toss to combine. Season with salt to taste.
    • Substitute white rice for brown rice.
