Chicken Yum Yum is a creamy skillet casserole made of noodles, chicken, carrots, peas, onion, and mushrooms.


    2-3 lbs. chicken breasts
    1 tsp. poultry seasoning
    1/2 tsp. salt & pepper
    2 tbsp. olive oil (divided)
    1 1/2 cups carrots, diced
    1 cup celery, diced
    1 1/2 cup white onion, diced
    1 1/2 cup mushrooms, diced
    1 tbsp. garlic cloves, minced
    1 cup peas
    3 tbsp. flour
    2 cups chicken broth
    1 cup almond milk
    1 box pasta


1. Heat a large skillet with 1 tbsp. olive oil. Season chicken with poultry, salt, and pepper. Cook chicken for 6 minutes, flip, cook for another 6 minutes, flip, and cook for another 6 minutes. Remove from heat and let cool. Once cooled, dice the chicken.
2. Add another 1 tbsp. olive oil. Add carrots. Cook for 3-5 minutes. Add diced celery, mushrooms, and onions. Cook for 5-8 minutes until onion is translucent. Add minced garlic and cook for another 1 minute.. Add frozen peas.
3. Add flour. Cook for 1-2 minutes until flour turns golden brown. Slowly add in chicken broth. Mixing to combine. Add in 1 cup almond milk . Bring to light boil, reduce heat, and simmer for 5-10 minutes.
4. Meanwhile, cook pasta according to package instructions until al dente. Drain and add pasta to creamy mixture.
5. Toss to combine. Serve.
