Description

A delicious and nutritious main course. Our Chicken Orzo Bake is a perfectly seasoned chicken casserole with warm, buttery vegetables, orzo, and vegan Parmesan cheese.

Ingredients:

    Chicken Ingredients
    2-3 lbs boneless chicken thighs (8-9 thighs)
    1 tbsp. olive oil
    Salt & pepper
    1 tbsp. olive oil
    1 tsp. Italian seasoning
    1/2 tsp. salt
    1/2 tsp. red pepper flakes

    Orzo Ingredients
    1 white onion, diced
    4-5 garlic cloves, minced
    1 tbsp. vegan buttery spread, divided
    1 tbsp. olive oil
    1 box orzo
    1 cup tomatoes, quartered
    1 cup spinach, chopped
    2 cups carrots, chopped/sliced
    2 tbsp. vegan buttery spread, melted
    2 cups chicken broth
    1/4 cup vegan Parmesan

Directions

1. Preheat oven to 350 degrees.
2. In a large skillet oven medium to high heat, heat 1 tbsp. olive oil. Season with salt and pepper. Cook for 4 minutes, flip, and cook for another 4 minutes. Remove from heat and set aside. Chicken will cook more in the oven later.
3. In a small bowl, combine 1 tbsp. olive oil, Italian seasoning, salt, and red pepper flakes. Set aside.
4. Using the same skillet, add 1 tbsp. olive oil and 1 tbsp. buttery spread. Add diced onion and sauté for 5 minutes. Add minced garlic and sauté for another 1-2 minutes. Add orzo. Cook for 3-5 minutes, stirring frequently until the orzo starts to brown. Remove from heat and transfer to a large baking dish (9x13 or larger).
5. Add quartered tomatoes, chopped spinach, and sliced carrots. Stir to evenly distribute. Add chicken broth, 2 tbsp. melted buttery spread, and 1/4 cup vegan Parmesan.
6. Baste the chicken with the olive oil seasoning mixture. Place on top of orzo.
7. Cover with foil. Cook for 45 minutes, stirring halfway. Remove foil, top with extra Parmesan, and cook for another 5 minutes.
