Description

Chicken 'N Dumpling Soup is a creamy soup with chicken, celery, carrots, onion, garlic, seasonings, and homemade dumplings.

Ingredients:

    Soup Ingredients
    2-3 lbs, boneless chicken breast (about 5-6 thighs)
    1 tbsp. olive oil
    3 celery stalks, diced
    3 carrots, diced
    1 onion, diced
    3 garlic cloves, minced
    6 tbsp. flour
    4 tbsp. butter
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. thyme
    6 cups chicken broth
    3 cups almond milk

    Dumpling Ingredients
    2 cups flour
    4 tsp. baking powder
    1 tsp. salt
    1/2 tsp. pepper
    1 egg
    2 tbsp. vegan butter
    1 cup almond milk

Directions

1. Heat a large skillet with 1 tbsp. olive oil. Season chicken with salt and pepper. Cook chicken thighs for 8-9 minutes, flip, and cook for another 8-9 minutes. Repeat with remaining chicken until all are cooked.
2. Add celery, carrots, and onion. Sauté for 8 minutes. Add minced garlic and sauté for for another 2 minutes. Add 4 tbsp. butter and 6 tbsp. flour. Mix, create roux, and cook for another 2 minutes. Add in almond milk and mix until combined. Transfer to a large 6 quart soup pot.
3. Add salt, pepper, thyme, and chicken broth. Bring to boil and simmer for 20 minutes.
4. Meanwhile, in a medium bowl, combine flour, baking powder, salt, and pepper. Combine egg, butter, and almond milk in a small bowl. Slowly, combine dry and wet ingredients. Mix until well combined.
5. Place tablespoon sized dollops of dumplings into the soup. Make sure not to overcrowd. If you need to do two batches, that's okay! Cover and cook for 18 minutes.
6. Serve soup with dumplings and top with fresh parsley!
