Description

Carne Asada is a Mexican grilled and sliced beef recipe. You can use skirt, sirloin, or tenderloin. Grilling is recommended.

Ingredients:

    Steak & Seasoning
    1/4 cup chili powder
    2 tsp. cumin
    2 tsp. salt
    2 tsp. black pepper
    1 tsp. garlic powder
    1 1/2 lbs. skirt, sirloin, or tenderloin steak

    Tomato Corn Salsa
    2 tbsp. olive oil
    6 fresh corn, shucked
    1 pint cherry tomatoes
    2 jalapeno peppers
    1 red onion, diced
    3 garlic cloves, minced
    2 limes, juiced
    1/4 cup fresh cilantro

    Burrito Fixings
    Flour Tortillas
    1 romaine lettuce, thinly shredded
    1 red onion, diced
    1 avocado, peeled, pitted, and diced

Directions

1. Fire up the grill.
2. Combine steak seasoning ingredients in bowl. Mix until combined. Brush both sides of the steak with olive oil. Rub the seasoning into the steak. Let rest for 25 minutes before grilling.
3. Meanwhile, grill the corn on high heat. Turn often. Cook about 10 minutes or until charred all over. Remove from heat and let cool before slicing the corn off the cob. Add corn kernels to bowl.
4. Dice the tomatoes, jalapeno peppers, and red onion. Mince the garlic. Add diced tomatoes, jalapenos, red onion, and garlic to bowl. Juice the 2 limes over the salsa. Stir in cilantro. Season with salt and pepper to taste.
5. Prepare the burrito toppings - thinly slice the lettuce, dice the red onion, and peel, pit, and dice the avocado.
6. Grill the steak over direct heat for 5 minutes, flip, and grill for another 2-5 minutes. Remove from grill and let rest for 5 minutes. Thinly slice the steak against the grain.
7. If you'd like warm tortillas, wrap the tortillas in foil, place indirect on the grill, and heat as you grill the steak.
8. To serve, layer lettuce, steak, salsa, and additional toppings in tortilla.
