Caramelized Onion Bacon Mac N Cheese is a delicious combination of mac n cheese with caramelized onion and crispy bacon.


    16 oz. elbow macaroni
    1/2 lb. bacon, cooked & crumbled
    2 tbsp. vegan butter
    1 sweet onion, diced
    3 tbsp. vegan butter
    3 tbsp. flour
    2 cups almond milk
    12 oz. vegan cheddar shreds
    1/2 tsp. salt
    1/4 tsp. pepper
    Pinch nutmeg


1. Preheat oven to 400 degrees.
2. Cook pasta according to package instructions.
3. Cook bacon in a skillet until done. Drain most of the grease, but leave the little brown bits to add flavor.
4. Using the same pan, add 2 tbsp. vegan butter and diced sweet onion. Cook until onions are translucent.
5. Add 3 tbsp. butter and flour to onions. Cook for 1-2 minutes until golden brown.
6. Slowly, add in the almond milk. Mix until combined. Add in cheddar shreds and cook for another 2-3 minute until melted.
7. Season salt, pepper, and nutmeg. Mix until combined. Add macaroni and stir until coated.
8. Spray a casserole dish. Transfer macaroni mixture and top with crumbled bacon.
9. Bake for 30 minutes.
