A spicy alternative for preparing traditional vegetables. Cajun Vegetables is a medley of Cajun seasoned yellow squash, zucchini, mushrooms, red onion, and carrots.
- 2 yellow squash, sliced
2 zucchini, sliced
1 cup mushrooms, sliced
1 red onion, sliced into half rings
3 large carrots, sliced
1 tbsp. olive oil
1 tsp. Cajun seasoning
1. Dice the vegetables to your desired thickness - the thickness will determine how long you cook the vegetables.
2. In a large bowl, combine the vegetables and olive oil.
3. To cook, you can grill the vegetables in a basket for 8-10 minutes. Alternatively, you can cook the vegetables in a cast iron pan.
4. Once the vegetables are cooked to your desired doneness, transfer to a large bowl, season with Cajun, and toss to coat.
