Description
A spicy twist on Surf & Turf. Cajun Surf & Turf Pasta is a combination of red onion, tomato, red pepper, tenderloin, shrimp, pasta, and Cajun seasoning.
Ingredients:
- Cajun Seasoning
1 tsp. paprika
1/4 tsp. cayenne
1 tsp. Italian seasoning
1/2 tsp. salt
1/2 tsp, pepper
1/2 tsp. fennel
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 1/2 tsp. red pepper flakes
Surf & Turf Pasta
3 tbsp. buttery spread (divided)
3 tbsp. olive oil (divided)
1 small red onion, diced
1 red pepper, diced
1 green pepper, diced
1 tbsp. garlic, minced
1 pint tomatoes, diced
1 lb. Jumbo shrimp
4 tenderloin steaks
1 box fettuccine
1/2 cup parmesan (allowed)
1 tbsp. parsley
1 1/2 cup chicken broth
1/2 cup white wine
Directions
1. Follow the package instructions to cook fettuccine to al dente
2. Heat a large skillet over medium heat. Add olive oil and buttery spread. Add diced peppers and cook for 2-3 minutes. Add onion and continue to cook until tender. Add minced garlic and cook for another minute. Remove veggies and set aside.
3. Add more olive oil and buttery spread to pan. Season steaks with Cajun seasoning mixture. Cook steak with 2-3 minutes per side until they are medium-rare. Remove from heat and seat aside.
4. Add more olive oil and buttery spread to pan. Season shrimp with Cajun seasoning mixture. Add to pan, cook for 1-2 minutes, flip, cook for 1-2 minutes, and continue until opaque and golden brown. Remove from pan and set aside.
5. Add white onion and chicken broth to pan. Cook on high for 5 minutes. Scrap the bottom of the pan to deglaze. Reduce to medium heat. Add tomatoes, Parmesan, 1 tsp. Cajun seasoning, and sautéed vegetables. Cook for 1-2 minutes.
6. Add noodles and parsley. Taste and season as needed. Transfer noodle mixture to bowl. Top with steak and shrimp.
