Description

Breakfast Hash Brown Sausage Cups are a great make-ahead meal that is perfect for on the go breakfasts. Breakfast Hash Brown Sausage Cups are made of hash browns, sausage, onion, and vegan cheddar cheese.

Ingredients:

    1 tbsp. olive oil
    1-2 lbs. breakfast sausage
    1 white onion, diced
    1 cup flour
    1 tsp. baking powder
    1/2 tsp. onion powder
    1/2 tsp. garlic powder
    1/2 tsp. salt
    1/2 tsp. pepper
    4 cups shredded hash browns
    1 cup vegan cheddar shreds
    1 cup almond milk

Directions

1. Preheat oven to 400 degrees.
2. Cook sausage in cast iron until cooked through. Crumble and remove sausage from pan leaving any drippings behind.
3. Add diced onion to pan. Sauté for 5-8 minutes until translucent. Remove from pan and add to sausage.
4. In a large bowl, add flour, baking powder, and seasoning. Mix until combined. Add sausage mixture, hashbrowns, vegan cheddar shreds, and almond milk. Mix to combine.
5. Spray muffin tins with non-stick cooking spray. Spoon mixture into cups until full.
6. Cook for 30 minutes until golden brown.
