Blueberry Apple Chicken Salad

Blueberry Apple Salad is a tasty summer salad consisting of bacon, grilled chicken, spinach, blueberries, apples, pecans, red onion, vegan Feta cheese, and avocados coated in a blueberry vinaigrette.


    Salad Ingredients
    3-4 chicken breasts, grilled and diced
    2 pints blueberries
    1 cup pecans
    1 red onion, diced
    1 lb. bacon, cooked and crumbled
    Apple, diced
    Baby Spinach
    Vegan Feta cheese
    Avocados, diced

    Dressing Ingredients
    3 tbsp. blueberry jam
    1 tbsp. balsamic vinegar
    2 tbsp. honey
    6 tbsp. olive oil
    1 tbsp. Dijon mustard
    Salt & pepper


1. Grill the chicken. Let cool and dice into bite size pieces.
2. In a large salad bowl, you can prepare the salad base. Add the diced chicken, blueberries, pecans, and red onion. If you are meal prepping, store this base separately. We prepare 4 nights of salad for two people.
3. When you are ready to serve, transfer 1/4 of the chicken mixture to a bowl. Add 2-3 strips bacon and crumble. Skin and dice one apple. Add as much spinach as desired. Drizzle with dressing. Toss to combine and serve in bowls. Top with vegan Feta cheese and diced avocado.
