Berry Chicken Salad

This salad recipe has become a staple salad in our household! Berry Chicken Salad is A fresh, tasty summer salad loaded with seasoned chicken, avocado, sliced almonds, vegan feta cheese, blueberries, blackberries, and strawberries with a poppy seed dressing.


    Seasoned Chicken Ingredients
    2 lbs. chicken breast
    1 tbsp. olive oil
    2 tsp. chili powder
    1 tsp. salt
    1/2 tsp. paprika
    1/2 tsp. garlic powder
    1/2 tsp. onion powder

    Salad Ingredients
    1 pint blueberries
    1 pint raspberries
    1 carton strawberries
    2 Avocados, diced
    1/2 cup sliced almonds

    Poppy Seed Dressing Ingredients
    1/2 cup white sugar
    1/3 cup white vinegar
    2 tbsp. red onion, diced
    1 tsp. dry ground mustard
    1 tsp. salt
    1 cup olive oil
    1 tsp. poppy seeds


1. Use a mallet to pound the chicken so that it is of even thickness to help it cook evenly.
2. Combine the seasoning in a small bowl and mix until combined. Coat the chicken with olive oil and rub the seasonings in.
3. In a large skillet and/or cast iron, cook the chicken over medium height for 4-6 minutes, flip, and cook for another 4-6 minutes until the internal temperature is at least 165 degrees. Remove from heat and let cool. Once cooled, dice into bite size pieces.
4. In a large salad, combine the spinach, berries, avocado, sliced almonds, vegan feta cheese, and diced chicken.
5. For the salad dressing, combine the ingredients in a mason jar and shake until combined.
6. Drizzle dressing over salad and toss to coat. Top with diced avocado.
