Description

What started as one meal at girl scout camp turned into a classic, go-to up north dinner when you want something filling without the cleanup. We usually make the meals in the morning then clean up the kitchen and throw the foil packets on the grill later that afternoon. This recipe is so easy to change up based on your favorite protein and vegetables.

Ingredients:

    Ground beef
    Sweet, golden, or russet potatoes
    Carrots
    Corn, canned, frozen or off the cob
    Green beans
    Onion
    Vegan buttery spread
    Salt & Pepper
    Heavy-duty foil

Directions

1. To prepare foil packets, tear off foil into 18 inch long pieces and layer two pieces together.
2. Dice the potatoes, carrots, beans, and onions. Trim the corn off the cob.
3. To prepare the meals, everything is to your preference. Prep the veggies and then have the family make their own packets as they desire. To make the packet, layer ground beef, potatoes, onions, carrots, corn, and beans. Top with 3 dollops of Vegan buttery spread. Season with salt and pepper.
4. Carefully, center your meal into the middle of the foil, careful not to overfill them, and wrap the long edges inward. Pull them together and fold the foil tightly. Then move to the ends and roll the foil tightly inward.
5. Fire up the grill when you get hungry. Cook the meals for 45 minutes over direct heat, flipping every 15 minutes so that the meals do not burn.
6. Carefully open the foil packets with tongs. The steam will be extremely hot.
