Description
Bacon Spanish Rice is a combination of bacon, onion, rice, tomatoes, green peppers, red peppers, and jalapeno with chili powder seasoning. A great side dish for your next taco Tuesday or Mexican style dish night!
Ingredients:
- 1/2-1 lb. bacon
1 onion, diced
1 1/2 cup jasmine rice
2 1/4 cup water
1 pint tomatoes, diced
1/2 green pepper, diced
1/2 red pepper, diced
1-2 jalapenos, diced
2 garlic cloves, minced
1 ½ tsp. chili powder
½ tsp. salt
1/4 tsp. pepper
1 bunch green onions, diced, for garnish
Directions
1. In a large skillet, cook bacon until crisp. Remove bacon and lay on paper towel to drain the grease. Once the bacon is cooked, reserve 1-2 tbsp. of bacon drippings.
2. Using the same pan with the reserved drippings, saute onion and peppers for 5 minutes. Add garlic and saute for another 1-2 minutes.
3. Add rice, water, diced tomatoes, chili powder, salt, and pepper.
4. Bring to boil.
5. Cover and reduce to simmer for about 30 minutes or until rice is tender.
6. To serve, top rice with bacon and diced green onions.
